  • 1 cup (240 ml) of all-purpose flour
  • ½ cup (100 g) of granulated sugar
  • 1 large egg
  • ½ cup (120 g) of ricotta cheese
  • 1 tsp of vanilla extract
  • 1 tsp of lemon zest
  • ½ cup (75 g) of mini chocolate chips
  • ½ cup (75 g) of chopped pistachios
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together 1 cup flour and ½ cup sugar. In another bowl, mix ½ cup ricotta, 1 egg, 1 tsp vanilla extract, and 1 tsp lemon zest until smooth.
  3. Combine the wet and dry ingredients until a soft dough forms. Rest the dough for 30 minutes.
  4. Roll out dough to ¼ inch thick on a floured surface; cut into 2×3 inch rectangles.
  5. Mix remaining ricotta with ½ cup mini chocolate chips and ½ cup chopped pistachios for the filling.
  6. Place a spoonful of filling in the center of each rectangle, fold over to seal.
  7. Bake for about 15-18 minutes until golden brown. Cool slightly before dusting with powdered sugar.
