  • 1/2 cup unsalted butter (softened)
  • 2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners sugar
  • 1/4 teaspoon sea salt
  • 12 oz semisweet chocolate chips
  • 11.5 oz milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Prepare your workspace by lining a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter and peanut butter until smooth. Add vanilla extract and sea salt; mix well.
  3. Gradually incorporate powdered sugar until the mixture is thick enough to roll into balls. Scoop tablespoon-sized portions and roll them into balls.
  4. Insert toothpicks into each ball and refrigerate for 15 minutes to firm up.
  5. Melt the chocolate chips with coconut oil in a double boiler or microwave.
  6. Dip each chilled ball into the melted chocolate, leaving some of the peanut butter visible for that signature look.
  7. Place them back on the baking sheet until the chocolate sets.
