  • 810 slices chicken bacon, chopped
  • 8 breakfast turkey sausage links
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1.5 lbs Russet potatoes, peeled and diced into ½’’ cubes
  • 6 large eggs
  • 1 cup shredded cheddar cheese or preferred cheese
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. In a 12-inch skillet over medium heat, cook turkey sausage links until browned. Remove and set aside on a paper towel.
  2. In the same skillet, add chicken bacon and cook until crispy. Set aside with the sausage.
  3. Add diced potatoes to the skillet; season with salt and pepper. Cook until crispy on all sides (about 8–10 minutes). Push to one side of the pan.
  4. Sauté onion, bell pepper, and garlic in the empty side of the skillet for about three minutes.
  5. Chop cooked sausage and add back into the skillet with bacon and potatoes; sprinkle with smoked paprika.
  6. Create wells in the mixture for eggs; crack an egg into each well and top with cheese.
  7. Cover and cook on low heat until egg whites are set (few minutes). Garnish with green onions before serving.
