  • ¼ cup (59 ml) vegetable oil
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon (5ml) pure vanilla extract
  • ½ teaspoon mint extract
  • ¼ cup (59ml) sour cream
  • 1 ¼ cups (175g) all-purpose flour
  • 1 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (118ml) milk
  • 2 tablespoons (30ml) fruit juice or broth
  • Green food coloring
  • 1 cup (226g) unsalted butter, cold
  • ¼ cup (28g) vanilla malt powder
  • 3 ½ cups (455g) powdered sugar
  • 2 teaspoons (10ml) pure vanilla extract
  • 1 tablespoon (15ml) heavy whipping cream
  • 1 tablespoon (15ml) fruit juice or broth
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, mix granulated sugar, vegetable oil, egg, egg yolk, vanilla extract, mint extract, sour cream, and milk with an electric mixer until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture while mixing on low speed until just combined.
  4. Add green food coloring gradually until desired shade is reached.
  5. Pour batter into the prepared pan and bake for about 15 minutes or until a toothpick comes out clean. Let cool before frosting.
  6. While the cakes are cooling, beat together cold unsalted butter and vanilla malt powder until smooth. Gradually add powdered sugar while mixing. Then add vanilla extract, heavy whipping cream, fruit juice or broth, and a pinch of salt. Mix until fluffy.
  7. Once cooled completely, frost each cake with your prepared frosting.
