- 1 lb. Mafaldine noodles (or fettuccini/linguini)
- 3 chicken breasts
- 4 tablespoons olive oil
- 6 tablespoons butter
- 6–8 cloves garlic, minced
- 2 cups heavy whipping cream
- 1.5 cups shredded parmesan cheese
- Blackened seasoning blend (includes smoked paprika, cayenne pepper, onion powder, garlic powder, black pepper, salt, thyme, oregano)
Instructions
- Pound chicken to an even thickness of 1/4 inch and rub with olive oil and blackened seasoning.
- Heat a skillet over medium-high heat and cook chicken for about 3-4 minutes on each side until dark amber.
- Remove chicken and let it rest under foil.
- In the same skillet, melt butter and sauté garlic. Stir in heavy cream and additional seasoning; simmer until thickened.
- Cook pasta according to package instructions; reserve some pasta water before draining.
- Combine cooked noodles with sauce, add parmesan cheese until melted, then slice chicken and serve on top.
