  • 1 medium head Cauliflower (cut into florets)
  • ½ cup Flour
  • ¼ cup Cornstarch
  • ¾ cup Milk
  • 1 tsp Baking Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • ½ tsp Salt
  • ¼ tsp Freshly Ground Black Pepper
  • 1¼ cup Panko breadcrumbs
  • ½ cup Mayonnaise
  • ¼ cup Sweet Chili Sauce
  • ¼ cup Sriracha
  • 1 tsp Rice Vinegar (optional)

Instructions

  1. Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, baking powder, paprika, salt, and black pepper. Gradually add milk while whisking until smooth.
  3. Coat the cauliflower florets in the batter until well covered. Add panko breadcrumbs and toss again for an even coating.
  4. Spread the coated cauliflower onto the lined baking sheet in a single layer. Bake for 20–22 minutes or until golden brown and crispy.
  5. While baking, mix mayonnaise, sweet chili sauce, sriracha, and rice vinegar (if using) in a separate bowl until well combined.
  6. Once baked, toss the cauliflower in the prepared sauce before serving on a plate garnished with chives or sesame seeds.
