Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

- In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and granulated sugar.
- In another bowl, beat the egg and mix in milk and vanilla until smooth.
- Combine wet and dry ingredients gently; fold in diced apples.
- Drop spoonfuls of batter onto the prepared baking sheet.
- Bake for 15-18 minutes until golden brown.
