  • 1.5 kg beef short ribs
  • 2 onions (one for the soup, one for topping)
  • 2 tbsp coriander seeds
  • 2 tbsp fennel seeds
  • 4 tbsp fish sauce
  • 400 g rice noodles
  • 300 g bean sprouts
  • Lemon (to taste)

Instructions

  1. In a spice container, combine coriander seeds, fennel seeds, cloves, star anise, and cinnamon.
  2. In a large pot, mix beef short ribs, one chopped onion, fish sauce, black pepper powder, sugar, water, and spices. Bring to a boil over medium-high heat.
  3. Reduce heat to low; cover and simmer for 3 hours.
  4. Cook rice noodles in boiling water until softened; drain and set aside.
  5. Blanch bean sprouts in boiling water for about 10 seconds before draining.
  6. In serving bowls, layer cooked noodles with beef from the broth. Pour hot broth over top and add bean sprouts, chopped coriander, and sliced onion. Squeeze lemon juice before serving.
