  • 5 medium Apples (peeled, cored, and chopped into ¼ inch cubes)
  • 1/3 cup Brown Sugar (packed)
  • 2 tablespoons Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Fresh Lemon Juice
  • 1 cup Water
  • 2 tablespoons Cornstarch
  • 8 6-inch Flour Tortillas
  • Non-stick Cooking Spray

Instructions

  1. In a non-stick skillet over medium heat, combine chopped apples, brown sugar, granulated sugar, ground cinnamon, lemon juice, and water. Cook for about 10 minutes until the apples soften.
  2. In a small bowl, mix cornstarch with an equal amount of water to create a slurry. Pour this slurry into the skillet with the apple mixture. Stir continuously until it thickens, which should take about 2-3 minutes.
  3. Preheat your oven to 350°F (175°C). Lightly spray both sides of each flour tortilla with non-stick cooking spray. In a separate bowl, mix granulated sugar and ground cinnamon together. Sprinkle this mixture over both sides of each tortilla. Cut tortillas into wedges and arrange them on a baking sheet in a single layer. Bake for about 10 minutes or until they are golden brown and crispy.
