  • 2 medium apples (Granny Smith or Gala) – peeled and diced into ½ pieces
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (room temperature)
  • 2/3 cup sugar
  • 2 eggs (room temperature)
  • 1 ½ teaspoons vanilla extract
  • ½ cup milk
  • 8 oz. brick-style cream cheese (room temperature)
  • 1/3 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1 egg
  • ¾ cup powdered sugar
  • 2 Tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and grease a 9 x 5-inch loaf pan lined with parchment paper.
  2. In a bowl, mix flour, oats, brown sugar, cinnamon, nutmeg, and melted butter for the topping; set aside.
  3. Combine diced apples with sugars and cinnamon in another bowl; toss well.
  4. Whisk together flour, baking powder, and salt in a large bowl. In another bowl, cream butter and sugar until fluffy; add eggs one at a time followed by vanilla.
  5. Gradually mix in dry ingredients and milk until just combined.
  6. Prepare cream cheese filling by beating cream cheese with sugar, flour, vanilla, and egg until smooth.
  7. Layer half of the batter in the pan, followed by half of the cream cheese filling and apple mixture; repeat layers finishing with batter on top. Top with crumb mixture.
  8. Bake for about 60 minutes until a toothpick comes out clean; cool before glazing.
